Thanksgiving Recipes – Holiday Survival Guide 2014

As we kick off November, the Holiday Survival Guide for 2014 has some wonderful Thanksgiving (or anytime) recipes for you and your loved ones!  Thanksgiving is one of my favorite holidays as we focus on the many blessings in our lives. When I was younger (and ate meat), my grandfather used to always make turkey on a spit on a grill (like a rotisserie chicken). It was the juiciest turkey I ever tasted and I waited all year for it! Crock pot stuffing

Orchestrating a holiday meal can be a very stressful task. I always have trouble with the dishes being ready at the same time, especially when the oven is packed full of yummy goodies. This recipe for crock pot stuffing is something that my parents came up with to help alleviate the stuffed oven issue. It doesn’t have that many ingredients, but it is big on flavor. Enjoy!

1 yellow onion, chopped

4 stalks of celery, chopped

4 carrots, chopped

2 to 4 cups of broth (start with 2 and work up – It also depends on how dry you like your stuffing)

1 loaf of bread (I used 1/2 whole wheat; 1/2 oatmeal and some slices of Ezekiel to give it some nice color variation)

1 T Poultry seasoning

1 T Salt (I like Celtic or Himalaya sea salt)

*Random side note: I like to use Bragg liquid aminos in place of or in addition to salt. However, don’t use Bragg liquid aminos in this recipe.

Rip the bread into pieces and set out overnight.

When ready to cook, saute the onion, celery and carrots in butter. Line the sides of the crock pot with coconut oil or butter.

Put the bread (which has been set out to dry) in the crock pot. Add broth to taste. We normally add just enough to make it moist. However, please keep in mind, the crock pot will add moisture and you can always add more broth later. Add some poultry seasoning, salt and pepper to taste. Cook on low for three to four hours (depending on the temperature of your crock pot). Enjoy!

Healthier Pumpkin Pie

Fall practically screams pumpkin and what fancy fall meal isn’t complete without pumpkin pie? When I can’t find a healthier ready-made crust (one that doesn’t include high fructose corn syrup), I like to make my own. It’s not hard and so good! You can check out my recipe here.

Healthier Pumpkin Pie

1 pie crust (that does not have high fructose corn syrup) or make your own

1 can 15 oz pumpkin (preferably one that is organic and without BPA in the can)

1 can sweetened condensed milk (preferably organic)

1 egg replacer (such as Ener-G egg replacer) or 1 egg

1/4 tsp ginger

1/2 tsp salt

1 1/2 tsp cinnamon

1/2 tsp nutmeg

Preheat oven to 425. Beat egg replacer or egg. Mix ingredients together and pour over crust.  Bake 15 minutes.  Then reduce heat to 350 and bake 30 to 35 minutes. Cool and garnish as desired. Refrigerate leftovers. Enjoy!

Graham Pie crust

I have never been a fan of pie crust made from dough. To me, and most of my family, graham cracker crust makes everything taste so much better! Stores sell graham pie crusts that are already made and in aluminum for easy clean up. However, after reading the ingredients, I am not a big fan. I was able to find a Granola Pie Crust from Heartland that has decent ingredients.

Another idea is to find graham crackers without yucky ingredients. You can even use graham cereal, too.

2 cups graham crackers or graham cereal

1/2 cups of pecan chips or another 1/2 cup of cereal

1/2 stick of butter, melted

Pulse graham crackers/cereal and nuts in blender or food processor.  Mix in butter. Press into pie pan. Enjoy in your favorite pie or cheesecake recipe!

Bragg Liquid Aminos

Most of us know that too much salt isn’t good for you. However, it does help bring out the flavor of some foods. When I am cooking, I try to use Bragg Liquid Aminos in addition to or in place of salt. It has a flavor like soy sauce, but has additional benefits for you including non-GMO soybeans and 16 amino acids.

Every Thanksgiving we used to have the canned yams with marshmallows on top. I would look forward to this dish all year! However, learning more about healthy and clean eating has put me on a search for healthier sweet potato recipes. When cooking a holiday meal, I try to keep it simple (to save some of my sanity). This recipe couldn’t be easier and it is so good! Even my little guy gobbles this up.

2 Sweet potatoes

1 T EVOO

1/2 tsp coarse Salt (I like Celtic or Himalaya sea salt)

1 tsp Garlic powder

1 tsp Cumin

1 tsp Paprika

Cut the sweet potatoes into chunks and drizzle with olive oil. Mix to coat. Sprinkle with spices. The spice measurements don’t have to be exact and differ according to your tastes. I normally just sprinkle them over the potatoes. Bake in 400 oven for 40 minutes or until soft.

Fruit and Veggie Challenge

The holidays can be a time of unhealthy eating.  Normally, I enjoy the holidays a little too much and end up gaining weight. Previously, this didn’t really bother me as I could lose the additional weight by just returning to my normal eating and working out habits. However, over the last few years, this holiday weight has been much harder to lose. Therefore, I try not to eat too much or too many treats, especially around the holidays. That being said, I believe if you are filling your body with healthy foods, making healthy choices is easier.

A simple step to healthier eating is to add more fruits and vegetables to our diet. This sounds easy, but unfortunately most Americans aren’t getting the recommended amounts of fruits and veggies. I thought I was eating healthy and eating lots of fruits and veggies until I started tracking my food intake. It turns out, I wasn’t eating as many as I thought.

So, I decided that if this challenge would help me, it could help others too.  In this challenge, a fruit or vegetable (or both) will be consumed at every meal. That’s it! Hopefully, keeping it simple will make you say “challenge accepted!” (Anyone else miss How I met your Mother?)

My plan is to post my favorite fruit and vegetable recipes here at SATZ.  I hope you will share with me some of your favorites, too!

You can challenge yourself even more by making sure you are drinking at least eight cups of water a day. Additionally, if you would really like to kick-start your progress, check out the reboot I will also be doing.
