    Healthy Breakfast ideas

    Mornings can be crazy! It seems everyone is rushing around trying to get somewhere very soon!

    So, I wanted to help make the mornings a little easier by sharing some of my healthy breakfast ideas!

    Healthy Breakfast ideas:

    -Fruit
    -Oatmeal with toppings
    -Keifer: throw in some granola or protein powder
    -Ezechiel Bread
    -Homemade muffins
    -Smoothies (links to my favorite smoothies are below)
    -Eggs
    -Hardboiled eggs – I always forget about these, but you can make a batch on the weekend and have a healthy, fast breakfast!
    -Whole wheat waffles or pancakes – while not the healthiest, these can be a special treat! Be sure to use 100% pure maple syrup!
    -Cereal – there are some healthier choices out there!

    Putting in a patio

    After moving into our new home, my husband decided to put in a patio. I’m sharing the process we went through in hopes it may help you, if you are thinking about putting in a patio.

    After deciding we wanted a brick patio, we met with the building company to discuss or ideas and they drew up a plan. Then we went to pick out the color and style of the bricks. There were so many choices. I am a visual person, so thankfully they had an almost matching color combination on display at the warehouse.


    A few weeks after that, we arranged for the process to begin. First, they removed our existing patio. This caused ants to invade out kitchen, which also happened to my neighbor. So it may be a good idea to take preventative measures. It wasn’t a big issue for us as the children had fun spraying the ants with our favorite natural cleaner and they were gone in no time.


    Be prepared for a large amount of stones, bricks, mud  and equipment to be in front and back of your home.


    After a few days, they came back to level the dirt and lay rocks for the foundation. The whole process was supposed to take about 5 days. However, they can’t work in the rain, so had to skip a few days.


    Next, they placed the wall and made the fire pit. They had to cut the stones, so this took a full day.

    They pounded the rocks and placed the bricks around the border and ground.  After a few minor issues (ants and electric problems), we have a wonderful patio that we can’t wait to enjoy this spring!

    Chia Seed Pudding

    Have you tried chia seeds? They are so versitle and good for you. They help keep you full, too! I like to make this chia seed pudding for an easy snack. It also helps when I am craving something sweet.


    Chia Seed Pudding

    8 oz milk (I use coconut or organic almond)

    2 T Chia seeds

    1 tsp. Sweetener (Organic maple syrup, honey or stevia)

    1/2 tsp. Vanilla

    Mix and refrigerate for at least 10 minutes. I like to make a few mason jars the at night and eat them the next day!

    Top with fruit or nuts.

    Our trip to Pebble Beach

    My husband won a trip to Pebble Beach, California and I was fortunate enough to be able to join him. I’m sharing our trip to Pebble Beach in hopes to help any future trip planning for our readers. If you are planning a trip to California, you may also enjoy these posts: Central Coast (coming soon) and Napa.

    Thursday

    We flew into Monterey airport and took the complimentary shuttle to The Inn at Spanish Bay. After we checked in and freshened up, we relaxed and enjoined the beautiful view.  Then, we took a taxi into Carmel. We visited Hogs Breath, which used to be owned by Clint Eastwood.

    They had amazing coffee drinks!

    Next, we walked down the road to have dinner at a quaint restaurant called Casa Nova. They had an 134 page wine list and amazing Italian food.  

    Friday 

    We had a free day, so we took advantage of the free exercise classes at the Inn at Spanish Bay.  There was only one other person in the class, so it was like our own little mini-personal training session.

    After starting our day with a nice workout, we had some free time before the work dinner later this evening. The hotel is sponsored by Lexus, so we were able to test drive this beauty down 17 mile highway!  

    We became friendly with a local in our workout class and she recommended lunch at Basil or Luca.

     We chose Basils and were not disappointed. From the gnocchi appetizer to the grass-fed burger or fish soup, our taste buds were delighted.   

    We worked off our lunch by walking down the hill to the beach (and back up). It was not like the beaches we are used to in Florida, but it was amazing.


    The waves were rough and there were lots of large rocks. The water turned turquoise when the rough waves crashed and there was greenery all around.

     We went in March, which is their rainy season and also technically winter. But from what I gathered from the locals, it is always around 60 to 70 degrees here.

    Saturday

    Today, some people golfed Pebble Beach while some, including me, enjoyed The Spa.

    The Spa was beautiful and had various amenities to enjoy. There was an eucalyptus steam room; a dry sauna and scented relaxation room.

    After my massage, a few friends and I took the scenic drive down there 17 mile coastal  road. There we saw seal rock and the Lone Cypress. 

    Sunday

    We flew out of Monterey on our way home. While we didn’t have any delays or issues. Many of our friends drove 1 1/2 hours to the San Jose airport because of this.

    Lentils and Arborio rice in the slow cooker

    After coming home from a long vacation, the pantry was raided and lentils and arborio rice (short grain rice) in the slow cooker was created. It is so easy and yummy!


    Lentils and arborio rice

    1 cup lentils

    1 cup arborio rice

    4 cups water (plus more if needed)

    1 onion, chopped

    Braggs liquid aminos, to taste

    Nooch, to taste

    Coconut oil

    Cheese is optional

    Cover slow cooker with a layer of coconut oil. Add all ingredients (except cheese). Cook for at least two hours adding additional water if needed.

    You can top with olive oil and Parmesan cheese or more nutritional yeast if desired.

    Leche Flan

    My in-laws’ friend is from the Phillipines and she taught me how to make leche flan. She said it is a traditional holiday dish. To me, it tastes a little more like custard than the traditional Latin flan.


    Leche Flan

    1 can evaporated milk

    1 can condensed milk

    1 lemon or vanilla

    8 egg yolks

    Lemon zest

    Optional Top layer

    1/2 cup sugar

    2 Tbsp water

    Heat sugar on high until golden brown


    Pour into pan.


    In a bowl, beat all ingredients except sugar and water and lemon zest.

    Beat ingredients.


    Strain ingredients.


    Add lemon zest to taste.


    Pour into pan with sugar. Heat pan in a bowl of water for 1 hour at 350.


    After an hour, let cool. Place it on the refrigerator.


    When you are ready to eat it, invert it onto a plate and enjoy!

    Vitiligo

    June is vitiligo awareness month and June 25th is Vitiligo awareness day. The day was created to help spread awareness and hopefully increase research of vitiligo.

    Vitiligo is a skin condition where the skin looses its pigment in places. It does not hurt and it is not contagious. Less than 1% of the population has this condition and therefore it isn’t very well-known or researched. As such, I wanted to try and help spread some awareness. Some think it is an autoimmune condition.
