After coming home from a long vacation, the pantry was raided and lentils and arborio rice (short grain rice) in the slow cooker was created. It is so easy and yummy!
1 cup lentils
1 cup arborio rice
4 cups water (plus more if needed)
1 onion, chopped
Braggs liquid aminos, to taste
Nooch, to taste
Cheese is optional
Cover slow cooker with a layer of coconut oil. Add all ingredients (except cheese). Cook for at least two hours adding additional water if needed.
You can top with olive oil and Parmesan cheese or more nutritional yeast if desired.
