Teacher gifts

There are many times during the year that teacher gifts are given. Therefore, I wanted to share some of my teacher gift ideas.

1. Gift cards: practical, easy to obtain and wrap. I have asked several teachers and they have said these are their favorite gift. Sure, they aren’t very personalized, but how many apple and #1 teacher items can one person use?  Additionally, my children’s school has the room mom ask the teacher their favorite things early in the year, so you can personal the gift cards to the teacher’s favorite things!

2. Food: Does your family have a signature food or teacher have a favorite food? You could give ready-to-make ingredients or something already made. Protein bites are a fun and easy thing to make (1st picture) or you can give something special to your family, like Slovak Kiffles or Kolachi in the 2nd picture.




3. Multipurpose lotion:
This stuff can do so many things (you can read about them here) and I love to give it with some cozy socks.



4. Scented Lotion: This stuff is a perfect Halloween, Thanksgiving or anytime gift!

5. Cute mason jars with energy tea: I saw these cute mason jars, so added some cute filler and my favorite energy tea and snack bar for a great energy boost!


6. Plant or Flowers: There is just something so beautiful and special about flowers! I especially love giving potted flowers that can last a long time.

My first race

I did it! I ran my first race! Well, maybe jog-walked is a more accurate word, but I finished it!


On the eve of my first race, I attended an all day convention in the local area and came home at dinner time. Normally, the night before a race, my husband (who has ran multiple marathons) eats a spaghetti dinner. He always eats boxed pasta with sauce from a jar, so he knows that he won’t eat anything to upset his stomach. The carbs help with energy, too. However, when I arrived home, there was no pasta for dinner on the eve of my first race. I tried to play it safe with some of the children’s mac and cheese and some veggies. Then, I prepared for the next day by laying out my clothes complete with a secured bib and timer on the shoe. My phone was charged and playlist was ready, so I showered and tried to get to bed early.

On the day of my first race, my alarm clock buzzed at 5:00AM. I got dressed and ready with some time to spare, so I read a quick devotional and had some breakfast. Ezekiel toast, peanut butter and a banana sounded healthy and full of the good fuel that was needed. My friend cautioned me to not drink too much water, so I only drank one glass before I left.

At 6:00AM, my neighbors and I loaded the car and left for the race.  It was then that I started to get a little nervous. My neighbors had run races before and I had only walked a 5K pre-babies (so many years ago). I had some obstacles completing the training (blog post coming soon), so my goal was to finish the race in under an hour – which is essentially fast walking.

After we parked and got out of the car, we discovered it was still brisk outside. So, I was very glad that I put my tank top on under a long sleeve shirt and wore pants. We walked to the race area; stopped at the port-a-potties (yuck) and made our way to the starting line. The half marathon started at 7:00AM and the 5K began at 7:20AM. Between the two start times is when my nerves were the strongest. When the race finally started, the herd was at a slow jog. It was easy to keep up with them, but then people started to break out in faster running. Some people walked, so I found myself weaving in and out of the big groups of people. Then, I thought it might be best to save my energy instead of weaving and just walked until the groups were spread out enough that there was space to easily move. I felt that it could also serve as a nice warm up as no one was really stretching before the race.

When there was enough space, I began jogging again. My playlist was cranking and I was enjoying the crisp, sunny day. Before I knew it, I saw the one mile mark. I told myself that I could walk to get water; drink it and then start running again, which was exactly what I did. I drank a glass of water and what appeared to be fizzy Gatorade. However, whatever it was upset my stomach. So, I stuck with water (and Performance when I got home).

After my little walk and drink break,  I found it helpful to find a few other runners who appeared to be going my pace. I tried to stay with them, so I could set my pace. I did allow myself to walk uphill for the small hill and enjoyed jogging down the hills. I felt like a little kid again doing that! When I saw the second mile water station, I started walking. It was here where I started to feel tired and tight in my calves. However, one of the teen volunteers handing out water said something that gave me the strength to go on. She said, “believe in yourself”. Those three little words spoke to me and changed my focus on what was hurting to how far I have come and how proud I should be that I was jogging this thing! 

After those words of encouragement, I found a new pace setting friend and was jogging again. At what I am assuming was mile 2 1/2, where it started to get tough again, I slowed to a fast walk. Then, a little child was holding a sign that said, “touch here for power” with a big, brightly colored star. Everyone was touching it and it brought a smile to my face.  So, off to jogging I went again.

Towards the end of the race a group of four little children were holding out their hands, giving high fives and saying, “you are almost there”.

I’m not sure if it was the speaker from the Shaklee convention talking about the importance of mindset and mantras or the energy of the race, but I found a way to jog for most of my first race!

Thankfully, I saw my friends and the home stretch. They snapped some pictures (thank you, Jenny)! I continued jogging until I crossed the finish line breaking my goal time at 41:18. 

I definitely didn’t come in first place (like my daughter wanted), but I did it! The finish line is a beautiful thing!


The medals are beautiful and will be a great reminder of this accomplishment.


And the treats at the end almost make the race worth it!

Putting in a pool

Are you thinking of putting in a pool? We did and I would love to share our story to help you make a more informed decision.

We had a pool at our home in Tampa and when we moved to the other coast (of Florida), my husband wanted a pool as well. The house we ended up buying did not have a pool, but he was determined it would one day. Three years after purchasing our home, we decided it was time to put in a pool. We didn’t really research companies as our son went to school with a little guy whose grandparents owned a famous pool company (think the company Mr. Ice himself uses on his TV show). Before I knew it, we were discussing plans for our new pool and pick out the colors! That was the fun part!

Then started the several months of building. First was the digging.

Then came the pounding.

There were lots of trucks parked out in front of our house.

Then, the walls and bottom of the pool was created.

Next, they evened out the dirt and started to add the stones.

My little man loved all of the dirt. When mommy was gone, he even got to play in it.

Next, the stones were put down; the sod was put down and the inside was painted the blue color. I’m not quite sure what is going on in the picture below, but I’m sure my neighbors loved it. Oh, I don’t think I mentioned that to begin the process, my neighbor’s tree had to be cut down to allow for the trucks to fit on the side of our home (hello zero lot line). Even doing that, one of the big trucks still nicked our neighbor’s home. Thank goodness we were blessed with wonderful neighbors.

The last thing we did (if you don’t count the landscaping) was fill the pool. We were instructed to fill it ourselves with a hose. It took the evening through overnight to fill it. Unfortunately, there was an issue and we had to drain the pool and fill it again. Our water bill was very high that month.

The children waited so patiently for the pool to be built. All they wanted to do was to jump in!

Three months after the process started and $20,000 over (my – apparently not my husband’s) budget, our pool was completed. Everything turned out beautifully and we really enjoyed our wonderful pool for a few months. Then, we found out we were moving to Chicago! However, it helped to sell our home fast!

Naturally green pancakes

Looking for a fun way to eat some green food without food coloring? This recipe is for naturally green pancakes! 

Green Pancakes

1 cup organic spinach

1 cup milk

1 tsp lemon

1 TBSP coconut oil

1 cup whole wheat flour

2 TBSP sugar

1/2 tsp baking soda

1 tsp baking powder

Pinch of salt

  • Blend wet ingredients until combined and spinach isn’t in pieces.
  • In seep rate bowl, mix dry ingredients.
  • Combine the two mixtures.
  • Butter or coconut oil a griddle.
  • Cool until you see bubbles and flip. Then, cook until slightly browned.
  • Enjoy!

Hello Fresh review

I received a coupon for Hello Fresh in one of those coupon envelops that come in the mail. While in a meal-planning rut and a busy time of life, I decided to give it a try.   

After quickly scanning the website, I selected the two time a week family plan. This plan supplies two meals for a family of four for approximately $80. The coupon brought the total closer to $40, so I gave it a whirl.  

The two meals arrived in boxes wrapped in silver insulation. The chicken was next two three ice packs. In the package something was leaking.  I was thankful it had been a very cold week as I wasn’t impressed with the packaging.  

The boxes contained most of the ingredients needed to prepare the meal and the recipes.  

The kids were so excited to help me cook the meals. All four meals I tried took approximately thirty minutes to prepare and cook. We all preferred one meal over the other from each week. For a family of two adults and two younger children, we always had left overs. Most of the left overs were the sides and not the protein.

When I signed up for this meal delivery service, I placed each additional week on hold as I didn’t want any other shipments yet. Something happened and I received notice that my shipment was coming. When I called to try and stop it, I was unable to do so. However, was pleasantly surprised with the customer service representatives resolution. 

In summary, I like the concept of a meal delivery service. However, felt that for the cost, the delivery method should be better. Have you tried a meal delivery service?

Green eggs naturally

Sometimes it is fun to shake up your meals especially on holidays and special days! Colored food can be so fun – like green eggs. However, I don’t like food dyes and don’t cook with them. This recipe turns eggs green naturally. It is perfect for St. Patrick’s day and the birthday of “Green Eggs and Ham” creator, Dr. Seuss! Not only is it healthy, it is easy! My son made them for breakfast today! 

Green Eggs

  • Eggs
  • Greens (spinach or kale are our favorites)
  • Milk or coconut milk

Optional add-ins

  • Cheese
  • Ketchup
  • Salt
  • Pepper
  • Garlic powder
  • Hot sauce

*Please use organic ingredients when possible.

Blend ingredients in a blender. 

Cook on medium-low stirring frequently. 

My children love them with a little cheese and of course ketchup (in true Pittsburgh fashion)! 

Enjoy and share with those who need a little naturally green eggs in their lives.

Valentine Protein Bites

Valentine’s Day is such a fun holiday! I love creating healthier treats to make celebrating more fun. These Valentine Protein Bites are easily made with just a few additions to the No-bake healthy cookies.

Valentine Energy Bites

1 cup organic Nut butter (we use the all natural Peanut butter with natural oils)

1/2 cup protein powder (we LOVE this protein and this one.)

1/3 cup honey (to make this vegan, use agave or brown rice syrup and adjust amount for the desired consistency)

3/4 cup Old Fashioned Rolled Oats

1/2 cup of cranberries or raisins (they are about the same color)

or

1/2 cup of colored chocolate candies

milk chocolate healthier

1 T milled chia seeds (optional, but more nutritious)

Roll into balls or press into a pan. Refrigerate 30 minutes to firm (and for leftovers). They are so fun and easy to make. My children and I love to make them together.
