Pumpkin Gingerbread Dessert

Why not combine two of your favorite desserts?

Pumpkin gingerbread

Pumpkin Gingerbread Dessert

1 cup canned pumpkin (try to buy organic)

1/3 cup of coconut sugar (regular sugar can be used if needed)

1 tsp pumpkin spice

1 egg

1/2 cup half and half or light cream

1 14 to 15 ounce package of gingerbread mix*

Coconut oil or cooking spray to coat pan

Whipped cream (optional but yummy) We love this easy homemade recipe.

1. Preheat oven to 350. Coat a 10 inch pie plate or 8x8x2 baking dish with coconut oil.

2. Combine pumpkin, sugar and spice. Add the egg and beat. Stir in cream and mix well.

3. Prepare gingerbread mix according to package. For some brands, applesauce may be added instead of butter.

4. Pour batter into pan. Then, spoon pumpkin mixture on top. Swirl using a knife.

5. Bake for 50 to 60 minutes until toothpick inserted in the center comes out clean.

6. Serve warm or at room temperature.

7. Refrigerate leftovers.

Serves approximately 8.

*I found a healthier gingerbread (in picture) and it was delicious!

Do you show kindness?

Do you show kindness each day? I know sometimes it can be hard. So, I’d love to share some things that help me remember to show kindness and compassion towards others. Hopefully, they will help you, too.

One way to show kindness is by making it a daily priority. Keeping a few reminders prominently displayed helps me to do this. I like to keep several positive quotes on the bulletin board of my office. This helps me to memorize and focus on the quotes staring right in front of me.

Another way that helps me to show kindness and compassion is by remembering that my children are always watching my actions. So, I try hard to lead by example. When you display kind acts in front of your children, you are teaching your children how to show kindness, too. This really helps me strive to be a better person each day.

When my children aren’t with me (reminding me to be on my best behavior), I find it helpful to remember that many people are fighting a battle about which we may not know. So, when someone is rude to me, I take a deep breath and remember that I am choosing to respond with grace.

Another way to keep the message of kindness as daily focus is to openly discuss being kind. At dinner or before bed, ask how your family showed kindness or helpfulness today. Talk about your day and about ways we can help others. By talking about being kind, children know it is important and they strive to do it. We also discuss gratitude and talk about all of the things for which we are thankful. This helps us to keep focused on all of the wonderful blessings in our lives, which boosts our mood and makes being kind easier.

It also helps to be part of organizations that do good. Some examples are: church groups, volunteer organizations, and groups that better the community. These groups are important; as they are other ways children can learn about kindness and being a better person to others. It is helpful for children to hear this message from multiple sources (just incase they may occasionally ignore you).

I believe that kindness is contagious. For example, while my children and I were exploring our new city’s downtown area, we stopped to enjoy a fountain. A sweet, older man reached out and gave me three shiny new pennies. He said they were for our wishes. After we made our wishes and threw the shiny, new pennies in the fountain, my son looked up at me and said, “I wished for that nice man to have a good life.” When I was done beaming, I realized that this man’s kind gesture helped put me in a better mood and I wanted to share this joy with others. Kindness produces more kindness!

Remember back to the last time you did something kind (hopefully, it isn’t too long ago). For example, think of when you held a door open for someone. Most of the time they then hold it for the next person and a big cycle of good deeds/kindness starts!

Showing kindness helps the recipient feel better, but it also helps you to feel better, too. When you are in a happy and kind mood, it also helps your children to feel better. It is a win-win for everyone.

5 Moving tips

Are you or someone you know moving? Would you like some moving tips? We just moved from Florida to Illinois, so I have recently tested these tips and would love to share them with you! I hope they help you to be better prepared for your move.

5 Tips for Moving

  1. Have the numbers handy of utilities and everything you turned on (it is helpful to schedule everything beforehand). This includes: power/gas, water, garbage, television, internet and the alarm company (if you have one). This way if something isn’t connected properly, you can easily call them. It also helps for re-scheduling appointments if needed.
  2. Unless you have a few days between closing and when your stuff arrives, hire a cleaning company to do a “move-in” cleaning. This gets all of the previous owner’s dirt out, so you can start fresh.
  3. Bring birth certificates or passports with you. These are very important documents and you don’t want anything to happen to them. Additionally, if you have children, you will most likely need them to register for school.
  4. Be sure to either pack essentials to bring with you or make sure they are in an easily identifiable box. A few things we were searching for were: towels and sheets. We packed a suitcase with toiletries, and I highly recommend doing this. Other good items to have are: cleaning supplies, laundry detergent, paper towels, plates, cups, utensils and napkins. Of course you can buy these when you arrive, but we just wanted to get unpacked.
  5. Pack some snacks. We ordered the traditional moving meal of pizza for dinner, but it helped to have snacks on hand for the kids (and us)! Some of our favorite packable snacks are listed in this post.

Moving

When someone says they are moving, it is normally followed by moans, groans and complaining of what a pain the process of moving can be. I know this because we are moving (again). However, this time, I am not allowing myself to get sucked in to the bad, but instead am focusing on the joy of moving.

We have lived in various parts of Florida for the last fourteen years. As a result of my husband’s promotion, the family will now be moving to Chicago! Yes, it is true that I can count the times on one hand that my children have worn pants. However, I am choosing to focus on the good. My children have never seen snow and I can’t wait to watch them enjoy it!

Another way I am finding the joy of moving is by looking at everything and I mean really looking at everything in my life. We have thirty days to enjoy palm trees, our wonderful friends and our pool, so you better believe I am going to appreciate every last minute.

Chocolate Peanut Butter healthy Smoothie

Starting you day on the right foot can lead to a ripple effect of greatness. For me, choosing a healthy breakfast not only gives me the nutrients I need, but it also helps me make better, healthier choices throughout the day. Some of my favorite ways to start the day are smoothies, oatmeal, no-bake healthy cookies and juicing. This is one of my favorite smoothies.

Chocolate & Peanut Butter Smoothie

Makes 1 serving

  • 2scoops Chocolate Smoothee Mix (my favorite is this one)*
  • 8oz non fat milk (low-fat soy milk can also be used)
  • 1tsp peanut butter
  • Ice (as needed)

*You can also use vanilla protein mix and add cocoa

Combine all ingredients in blender. Blend until creamy.

You can use this approach for anything: your job, your health or any aspect of your like that you would like to change. Think about one of your dreams. Then, work backwards to plan out the steps you should take to achieve your dream.

For example, if you want to loose 10 pounds. Write out how many pounds you would like to loose each week, when you will exercise and what you will eat. Then, make your grocery lists, shop for healthy food and find a day of the week to prep the food.

We talked about the benefits of fish oil here. However, when purchasing fish oil, the choices can be overwhelming. The information below can assist with selecting a quality fish oil.

One of the more common nutrient deficiencies in the most people’s diet is the lack of EPA and DHA found in fish oil.¹

Following dietary suggestions to consume 2-3 servings of fish a week – especially cold water, oily fish — is good advice to ensure adequate EPA/DHA, but most consumers do not eat fish that frequently. Many consumers are concerned about the risk of contaminants in many common fish. In fact, many consumers question whether the health benefits of eating fish outweigh those of eating fish that could contain mercury, lead, or other toxins.

Recent reports do suggest that there may be cause for concern about the quality of our fish. Imported seafood accounts for around 80 percent of the fish we consume, and according to the U.S. Government Accountability Office (GAO), only about 2 percent of imported seafood is inspected (and only 0.1 percent is tested for banned drug residues). Farmed fish seems to be no better with many of these fish containing PCB’s and other chemicals with serious long-term health effects. While mercury is certainly a concern, fish may also contain lead, arsenic cadmium, dioxin or other toxins.

With all of these concerns, many people turn to supplemental fish oil as a solution. When fish oil is properly processed, contaminants can be removed or reduced to levels where they should not pose a risk.

When choosing a clean fish oil, look for the following:

  • Quality Company: Not all fish oil is created equal. Find a company you can trust that has a long history of quality production
  • Molecular Distillation: This process places the fish oil under a vacuum, which allows it to boil at a much lower temperature (protecting it from damage). Molecular distillation allows for EPA and DHA to be removed and the heavy metals left behind. A benefit of the process is that the EPA/DHA is concentrated and fishy odor/taste is reduced. When done correctly, molecular distillation is capable of reducing the toxins in fish oil to levels considered to be safe by the EPA and other agencies.
  • Small Fish: Bioaccumulation occurs when toxins accumulate as we move up the food chain. A small amount of a toxin is no problem in a small fish, but as a larger fish eats thousands of small fish, it now has accumulated more of that toxin. When still larger fish now eats hundreds of those fish, toxins concentrate even more. Companies using small fish help to reduce the bioaccumulation of toxins.
  • Sustainability: Fisheries must be managed to ensure we have a good source of fish oil well into the future. Friends of the Sea is an international conservation organization that sets strict criteria for sustainability. Friends of the Sea only certify products made from fish stocks that are not overexploited. Attention is paid to population size and catch limits and avoiding harvesting at spawning time.

Ensuring quality should be a priority for anyone looking to get the most out of their fish oil.

Fish oil can have many benefits. The information below can help you understand them. You may also want to review some tips for choosing a quality fish oil here. (coming soon)

Fish oil is well known for its ability to help reduce the risk of heart disease, but those are not the only benefits of fish oil. Recent research has focused on the Omega-3 oils EPA and DHA, and has come to some interesting conclusions.

  • Brain: The relationship between adequate Omega-3 intake and brain health has been the subject of much recent Omega-3 research. The brain is made up of almost 60 percent fat and much of the nervous system is composed of fats¹ as well. The cerebral cortex (which is responsible for memory and attention) is estimated to contain around 20 percent DHA. Essential fatty acids are also involved in neurotransmission.EPA and DHA have been studied for their effects on mood, 2cognition, memory and learning, and attention. ³
  • Joint Health: EPA and DHA have been studied for many different joint conditions and it may help promote joint mobility and flexibility and may also help to reduce stiffness, swelling, and pain. 4,5, Much of the research on fish oil and joint health has focused on its association with supporting the body’s natural inflammatory response. EPA and DHA work to help modulate natural inflammatory mediators (called eicosanoids and cytokines) in the body. 6
  • Pregnancy: The importance of EPA and DHA for the normal development of a baby cannot be overstated. The essential fatty acids help with normal brain, eye, and nervous system development. 7 A high concentration DHA is found in eyes and brain. Dietary or supplemental DHA is needed for the optimum functional and maturation of the retina and the visual cortex and is especially important for the growth and development of a child.
  • Skin: Essential fatty acids are helpful for skin health and may help for a variety of conditions including inflammatory conditions of the skin. 8
  • Immune system: While the impact of Omega-3 oils on the immune system are just now beginning to be investigated, it appears that EPA and DHA may increase B-cell functioning9, and may help to enhance other areas of the immune system.10

When thinking about fish oils, think beyond the cardiovascular benefits. Make sure you are eating fish 2-3 times a week or supplement with a good quality fish oil.

Tropical Green Smoothie

Smoothies are a great way to begin your day making healthy choices. One way I like to add an extra kick of health to my morning routine is to throw some veggies in my smoothie! Gotta love a green breakfast!
 
Tropical Green Smoothee
Makes 1 serving

2 scoops Vanilla Protein Mix, you can use any kind, but one of my favorites are this one and this one.

1 cup frozen chopped greens, such as kale or spinach

1/2 cup frozen pineapple

1/2 cup frozen ripe banana

1 1/2 cups unsweetened almond or coconut milk

Sweetener to taste
