I recently started eating beets and I love them! This recipe is easy, but yet so delicious. The flavors compliment each other so well. It’s so good that my husband and father love this recipe and they don’t eat many veggies (much to my dismay)!
Roasted beets with feta and onion
- Green onion
- Olive oil
- Wash and slice beets in approximately ½ inch thick slices
- Lightly coat both sides in olive oil
- Bake at 400 degrees for approximately 35 minutes, or until tender
- Set on a plate and top with crumbled feta cheese and chopped green onions
