Taco Chicken

After going to a local Mexican restaurant and having both children clean their plates, I have been thinking of ways to re-create the restaurant’s chicken at home.

My vision was to have the chicken breasts slow cook all day to get to a desired shredded consistency, but life happened. So, I ended up boiling the chicken and then throwing it in their crockpot for a few hours. It came out delicious!

Here is the recipe. I hope you enjoy it, too!

Taco Chicken

  1. 3 Organic Chicken breasts
  2. Liquid to cover 1-4 of chicken (I used water from boiling the chicken)
  3. 8 shakes Chili powder
  4. Salt, to taste
  5. 2 grinds of Pepper
  6. 4 shakes Onion powder
  7. 3 cloves Garlic
  8. 4 shakes Cumin
  9. 1 shake Turmeric

Throw everything in crockpot and cook all day. Or if you forget like me, you can boil the chicken for 20 minutes and the put in the crockpot. We are having it for our Taco Tuesday dinner.

How do you like your chicken? I’d love to hear it in the comments below.

Happy Tuesday,

Stephanie
