Healthy Pumpkin Bars

I’m so excited to be back up North, where there are four seasons. It is really inspiring me to try new pumpkin recipes! These healthy pumpkin bars are a nice healthier treat to enjoy, especially in the fall! I love adding in some protein power, too!

On a random side note, does anyone still call this time of year Autumn?!?!

Healthy Pumpkin Bars
1 cup of rolled oats
1 T cinnamon
1/2 cup pumpkin puree
1/2 ripe banana, mashed
1/4 cup peanut butter

Optional ingredients
2 scoops of protein powder – you can use any kind, but my favorite is this one
1 T flax seeds
1 T chia seeds
1 T coconut sugar, honey or other natural sweetener

*Please use organic ingredients when possible.
