Quinoa dinner recipe

Have you tried quinoa? It’s a great source of protein and so fast and easy to make! You start with the base of quinoa and add in your favorite items, such as veggies, herbs and spices. It is something you can throw together on a busy weeknight.  You probably have most of the items on hand. You can adapt the recipe by adding whatever looks good in your freezer or pantry. It is so versatile and it is one of our favorite dinners!

Quinoa dinner
1 cup quinoa, rinsed
2 cups broth
1/4 cup of corn (we use frozen, but canned or fresh would work, too)
1/4 cup of peas and carrots (we use frozen, but canned or fresh would work, too)

Optional, but so good
veggies (fresh, frozen or canned)
edamame
Bragg liquid amino (or soy sauce/tamarini)
Garlic, minced
Nooch
Miso
Beans (we like black beans, white or chickpeas)
Tomatoes; canned, fresh or frozen
chopped onions, celery or carrots, sautéed first in the pan
lemons or lime for extra flavor

1. Prepare quinoa as directed on package, but replace water with broth.
2. Add any (or all) of the optional ingredients.
3. Serve and enjoy! It is great cold, too.
