Every Thanksgiving we used to have the canned yams with marshmallows on top. I would look forward to this dish all year! However, learning more about healthy and clean eating has put me on a search for healthier sweet potato recipes. When cooking a holiday meal, I try to keep it simple (to save some of my sanity). This recipe couldn’t be easier and it is so good! Even my little guy gobbles this up.
Sweet potato bites
2 Sweet potatoes
1 T EVOO
1/2 tsp coarse Salt (I like Celtic or Himalaya sea salt)
1 tsp Garlic powder
1 tsp Cumin
1 tsp Paprika
Cut the sweet potatoes into chunks and drizzle with olive oil. Mix to coat. Sprinkle with spices. The spice measurements don’t have to be exact and differ according to your tastes. I normally just sprinkle them over the potatoes. Bake in 400 oven for 40 minutes or until soft.
